Mocha Cream Tartlets.

Coconut milk is a powerful tool in the vegan baking arsenal. Here, it provides a rich, satisfying base for a mocha cream.

Cream
1 13.6-oz. can light coconut milk
1/2 cup maple syrup
1 tsp. vanilla extract
1/2 cup unsweetened cocoa
3 Tbs. agar flakes
1 Tbs. espresso powder
2 Tbs. kudzu powder

Tartlets
1 1/2 cups blanched almonds
1/2 cup all-purpose flour
1/4 cup maple syrup
1/4 cup melted coconut oil
1/4 tsp. sea salt
